This flavoured Italian-style breadcrumbs recipe is a quick and easy way to add texture and flavour to your finished dish. Sprinkle over pasta dishes, risotto, salads, soups, grilled veggies, avocado on toast, or even a poached egg!
Ingredients

2 thick slices of good quality sourdough bread, about 150g (slightly stale bread works best!)

2 tbsp Mount Zero Frantoio Extra Virgin Olive Oil
- 1 garlic clove, finely chopped
- Zest of half a lemon
- Handful of parsley, finely chopped
- Freshly cracked black pepper, to taste
- Mount Zero Pink Lake Salt, to taste
Directions
Using a food processor, blitz the bread on the pulse setting until coarsely crumbed.
Place a frying pan on medium heat, and when hot, add the olive oil. Add the breadcrumbs and toss to coat them in oil, and then fry until golden and crispy. Add chopped garlic, and cook for 1-2 minutes.
Transfer to a bowl and mix throug lemon zest, black pepper and parsley. Taste and season with more salt if needed.
