cauliflower, leek & grains soup

Ingredients

2 tbsp Mount Zero Organic Extra Virgin Olive Oil

1 large leek, finely sliced (just the white stalk section)

1-2 cloves of garlic, crushed and finely chopped
- ½ - 1 cup Mount Zero Biodynamic Soup Mix
-
½ - 1 tsp ground cumin
- 1 litre organic bone broth (or broth of your choice)

1-2 tsp coconut sugar
- ¾ head of cauliflower, cut into florets

Mount Zero Pink Lake Salt, to taste

Freshly cracked black pepper, to taste

Drizzle of Mount Zero Lime Pressed Extra Virgin Olive Oil, to finish
Directions
In a large pot, sauté the leek and garlic in olive oil until fragrant and the leeks have softened.
Stir in the soup mix, ground cumin, bone broth and coconut sugar.
Bring to a boil and simmer to cook for about 30 minutes.
Add in the cauliflower florets and continue to cook for another 15-25 minutes, or until the cauliflower has cooked evenly.
Season to taste with pink lake salt and pepper.
Enjoy as is or blend smoothly in a blender.
- Serve with a dash of cracked black pepper, a drizzle of Mount Zero Lime Pressed Extra Virgin Olive Oil.
