mount zero grain salad with barberries

Transformer head chefs Luke Florence and Bryce Edwards complete their month as Mount Zero Heroes with a nutritious, middle eastern influenced grain salad.

Ingredients

  • 50g Mount Zero Wholegrain Freekeh, cooked according to packet instructions
  • 50g Mount Zero Biodynamic Pearled Farro, cooked according to packet instructions
  • 100g Mount Zero Beluga Black Lentils, cooked according to packet instructions
  • 50g Mount Zero Organic Australian Quinoa, cooked according to packet instructions
  • 75-100ml vegetable stock
  • 25g unsalted cultured butter
  • 10g barberries
  • 1 tbsp herbs (parsley, chives, chervil all work well), finely chopped
  • 1 tsp hemp seeds
  • Mount Zero Pink Lake Salt, to taste
  • Freshly cracked black pepper, to taste

Directions

  1. Combine all grains with vegetable stock and butter and simmer until stock is reduced and grains are glazed with butter.
  2. Remove from heat and add chopped herbs and barberries. Season with salt and pepper to taste.
  3. Plate grains and top with hemp seeds and a few more fresh herbs.
