The Big Smoke - Martini
Scarf Community Organisation transforms the lives of young people seeking protection and those from refugee and migrant backgrounds by getting them into work, while adding flavour and heart to the hospitality industry. Founded in 2010, Scarf is a charity that operates as a social enterprise, running regular Scarf Dinners which create paid work experience opportunities for trainees. Mount Zero has been a proud partner of Scarf since 2011. The Big Smoke Martini was co-created by Scarf Graduate Kimiya, who now works at Atria at The Ritz-Carlton.

Ingredients
- Gin
- Mount Zero Smoked Extra Virgin Olive Oil
- Manzanilla Sherry
- Green olive brine
- A skewered green olive - to garnish
Directions
- Combine 120 ml of Mount Zero Smoked Olive Oil with 700ml of *Gin (ideally juniper-forward brand, we used Archie Rose), infuse at room temperature for 4-5 hours and shake occasionally to mix through.
- Place in a freezer until the olive oil is frozen solid.
- Remove large chunks of frozen olive oil, before running the rest of the liquid through a coffee filter.
- Bottle the infused gin and store in the fridge until use.
- Combine 60ml gin, 20ml sherry and 10ml olive brine in a mixing glass
- Add plenty of cubed ice
- Stir until ice cold (about 30 seconds)
- Strain into a chilled Martini glass
- Garnish with a skewered olive (or more, if you like!)
