Which olive should I start with?
Frantoio if you want one oil for everything. Arbequina if you bake. Can't choose? The Frantoio and Arbequina pair is $35.
Will a 2 or 15 litre cask go off before I finish it?
A cask protects the oil from light and oxygen, the two things that take the flavour out of it, and it pours from its own tap. Fill a bottle for the bench and the cask keeps the rest fresh.
What does "Organic In Conversion" mean?
It comes from a grove that is moving to certified organic farming. The oil is a blend of Frantoio and Corregiola olives. A blend is fine, as long as you know what's in it.
