As seen on ABC's Landline, these delicious olives have been cured using an experimental new debittering process that we are participating in in collaboration with UNISA and resident professor, John Fielke. This process debitters olives by filtration rather than fermentation, helping to preserve the health benefits of fresh olives and reducing the water consumption associated with brine fermentation.

These pitted olives have a wonderful fruity flavour and crisp texture, making them perfect for adding to pastas, pizzas and bread. Or, if you're anything like us, you'll be snacking on them by the handful!

Please note, these are 'turning colour' olives, so some olives may look green, some may be a burgundy colour and others somewhere in between. Normally, these different colour olives are separated out by production lines, but we've left them in these pouches as the different colours provide a lovely mix of flavour and texture. They look fantastic in pastas, pizzas and bread, too!

Excellent

Excellent. I really wanted to try your olives made via the new technique developed at Uni of SA. They are less bitter and certainly an improvement for my taste buds. But I think you need to promote them more clearly. They are not easy to find and even the packet doesn't advise what they actually are.

They don't all look like green olives, so a surprise. I found straight out of the pouch a bit tart, stringent, left a little while in a bowl to settle, and come to room temperature, they are absolutely delicious.

As mentioned in the 'product information' section, these are 'turning colour' olives, so some olives may look green, some may be a burgundy colour and others somewhere in between. Normally, these different colour olives are separated out by production lines, but we've left them in these pouches as the different colours provide a lovely mix of flavour and texture. You are right that they become less tart when you warm them up, we do recommend eating them at room temperature so you can taste their full flavour!
